Allo Simonne, founded in 2018 by Belgian friends Quentin Ryckaert and Vincent Coja, crafts exquisite bean-to-bar chocolates and gourmet spreads that cater to even the most discerning palates. Their products, known for being innovative, healthy, and suitable for diabetics, vegans (with a few exceptions), and those with peanut allergies, reflect their commitment to quality and craftsmanship. From roasting the nuts to filling the jars, they control every stage of production, a dedication that has earned them multiple accolades at the International Chocolate Awards. Inspired by Quentin's grandmother, Simonne Allo, the company continues to evolve, with their latest creation—bean-to-bar tablets—launched in 2023 from their Montreal workshop.

In southeastern Mexico, the rolling hills are the birthplace of Agrofloresta Mesoamericana, an organization uniting over 200 families devoted to cocoa cultivation. These full-flavored beans have been meticulously roasted and blended with Quebec maple sugar to create a gourmet chocolate.
